If it is Coffee and Hot Chocolate weather at home, then outdoors – this is the season for Bhutta. Fashionably known as Corn on the Cob. It is one of the monsoon’s great attractions. Evening, ignoring the weatherman’s grim warning and the high tide lashing the coast, I will go down to the sea. And search along the rain-swept and wind-blown road for the Bhuttawala. He will be roasting corn on a sizzling brazier under a torn umbrella. I will find him by the aroma of the smoke.
I am not a let’s-get-wet-in-the-rain type. This doesn’t excite me anymore. You have to be a poet, a teenager, or in love to enjoy running about in the rain. Experience has taught me that this romantic misadventure can land you with congestion in the
chest, cold in the head, and an ache in the bones that will last for the rest of the rains. But for the Bhuttawala I will step out. I check the tenderness of his corn with my thumbnail, then have it roasted, brushed with lime, and sprinkled with chili powder. I could buy Bhutta at the grocer’s. Or one of those fancy gourmet stores. Some call it American Corn. Ears of freshly-plucked maize whose kernels are soft, juicy and protected by green husks. You can use it to make Sweet Corn Soup. I am not in favour of doing that. If all of us start making Sweet Corn Soup what will the neighborhood Chinese takeaway do! Also, roasting Bhutta at home on the gas is not the same as having Bhutta done outdoors on coal by one of the wet and windy seafronts. Home is for Coffee and hot buttered toast. Do you agree?
